Maison Jullian
Hidden away in a small 19th century castle, Maison Jullian is the place to be for food lovers.
Our ambition is to enrich your experiences in fine dining, well-being and culture.
Maison Jullian is located on the banks of the Canal du Midi which is conveniently only 5 minutes walking distance to the train station and 10 minutes to the centre of Béziers, make Maison Jullian a unique and privileged place.
Following a 7 month renovation period which began in 2022, our restaurant opened
in January 2023, and our guest house opened in May the same year.
One of the many assets of Maison Jullian is resident chef, Charles Teboul.
Every day, you can taste seasonal, local cuisine, anchored between tradition and modernity.
Each of the guest rooms have their unique design and they all benefit from views of the garden and the Canal du Midi.
Throughout the year, Maison Jullian hosts cultural and well-being events .

A couple of experienced entrepreneurs
Candy Miller is dual nationality French-British. After a career in marketing and communications in a multinational food company, she created Paperdolls in 2011, a concept store bringing together young fashion designers in the historic Montmartre quarter of Paris.
Candy has a strong passion for history, decoration, fashion and design.
She has close family links to the region which naturally led her to settle in Béziers.
Charles Teboul is trained in hospitality. He launched and managed several bistronomic restaurants in Paris.
He began his career as a sous chef to the Michelin-star chef Philippe Renard (Hôtel Scribe, Paris Opéra).
During his thirty years of experience, he has developed a passion for the world of wine.
He is also a supporter of responsible agriculture, respectful of the land and the environment.
A family story
Extensive research into the history of the building, led us to Monsieur Martien Jullian, vineyard owner, wine merchant and founder, along with his brother Léon, of the Jullian Frères company.
At the time, the company was thriving due to the invention of “Céleste” Bordeaux mixture, which was an anti-mildew manufactured in their sulfur factory.
Around 1890, Martien built the small castle (or folly) and named it “Villa Sauclières”. It notably included the billiards room with a neo-Moorish influence.
His family lived there for around thirty years.
In naming the house “Maison Jullian ”, we wanted to keep Martien's family history alive.
Our logo is inspired by his initials which appear in 3 different places in the house.
We are grateful to be in contact with around ten of his great-grandchildren today.
